Crispy Parmesan Roasted Chickpeas Recipe

You'll find these simple Crispy Parmesan Roasted Chickpeas are so addictive that when you make them, your family and friends won't stop eating them until they're gone!


And that's okay, because they're nutrient-dense.


Full of plant-based protein, and only three ingredients (plus salt and pepper to taste).

Serve these as a snack, a party hors d'oeuvre, or try them in place of croutons in soups or on salads.

Ingredients

  • 2 tablespoons + 2 teaspoons extra-virgin olive oil

  • Two 15-ounce cans chickpeas, drained, rinsed well, and patted dry, or 3 cups cooked chickpeas

  • 1/2 cup firmly packed freshly grated Parmesan cheese (pre-grated won't melt)

  • Sea salt

  • Freshly ground black pepper

Makes 3 cups

Takes about 25 minutes

  1. Preheat the oven to 425ºF.

  2. Pour the 2 tablespoons of olive oil into a 4 or 5 quart baking dish. Place in the preheated oven.

  3. In a medium bowl, combine the chickpeas, the remaining 2 teaspoons olive oil, the Parmesan cheese, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Mix well until the chickpeas are thoroughly coated.

  4. Carefully remove the hot baking dish from the oven and pour the chickpea mixture into it.

  5. Use a wood spoon to spread the chickpeas into a single layer.

  6. Roast for 10 minutes, then stir with the wooden spoon and continue to roast until crispy and golden brown, an additional 7-9 minutes.

  7. Season with additional salt and pepper as desired, and serve hot or at room temperature.

DO NOT DRAIN THE CHICKPEAS ON PAPER TOWELS OR THEY WILL LOSE THEIR CRISPINESS.
