Spiced Sweet Potato Crisps Recipe

With just the addition of your favorite spice, these very thinly sliced sweet potato crisps become a delectable, nutritious stand-in for higher calorie chips.


Serve them as a snack, or with soups and sandwiches, or even with burgers.

Ingredients

  • Organic olive oil cooking spray

  • 1 large sweet potato, peeled and very thinly sliced (use a mandoline if you have one)

  • 1 teaspoon seasoning of choice (our favorites: paprika, smoked paprika, ground cumin, ground cinnamon, chili powder, garlic powder, or a mix)

  • Sea salt

Makes 2-4 servings

If handled gently, unwashed sweet potatoes can store well for weeks or even months in a dry, cool location. Sweet potatoes are an excellent source of beta carotene, vitamin C, and potassium.

  1. Set a rack in the middle of the oven and preheat the oven to 375ºF. Lightly spray two rimmed baking sheets with the cooking spray.

  2. Arrange the sweet potato rounds in a single layer on the baking sheets (try not to crowd or overlap them). Spray the tops with a fine mist of cooking spray and lightly sprinkle with your spice/s of choice (do not salt them yet, as this releases moisture).

  3. Place one of the baking sheets in the oven on the middle rack and bake for 12-15 minutes, until the rounds are beginning to crisp at the edges.

  4. Flip the rounds, sprinkle with additional spice to taste, and rotate the pan in the oven. Bake until the rounds are lightly browned around the edges and tender in the middle, an additional 5-7 minutes.

  5. Watch them closely in the last 5 minutes, taking care not to tlet them burn - remove any rounds that have browned from the baking sheet and place them on a wire rack to continue crisping.

  6. Once the first batch is done, repeat with the second baking sheet.

  7. Season with salt and serve.
