Tomato Pesto Eggs Avocado Toast Recipe

If you're looking for a quick and tasty breakfast, this is it. Pesto Eggs are delicious on their own, and combined with Avocado Toast take the tasty to a whole 'nother level.

Ingredients:

  • 1 Slice of Sourdough Bread

  • 2 Tablespoons Ricotta Cheese

  • 1 Avocado - mashed

  • 2 Fried Eggs

  • 2 Tablespoons Pesto

  • 1 Tablespoon Olive Oil

  • 4 Cherry Tomatos - sliced

  • 3 Tablespoons Quinoa

  • Parmesan Cheese to taste

  • Salt

  • Pepper

Makes 1 serving

Takes about 20 minutes

  1. Start Pesto and Olive Oil in a pan. Add in the Eggs and sliced Cherry Tomatoes.

  2. Toast the Sourdough Bread.

  3. Spread the Ricotta Cheese on the Toast, then the Mashed Avocado.

  4. Add the Fried Eggs.

  5. Sprinkle with Quinoa, Parmesan Cheese, Salt, and Pepper to taste.
